Apples and Almonds Cake

Ingredients

  • 5 apples
  • 1/2 lemon juice

For the dough:

  • 200 g fermented flour
  • 200 g sugar
  • 1 pack of vanilla sugar
  • 3 eggs
  • 12 tbsp of milk
  • 7 tbsp of sunflower oil
  • 1 pinch of salt

For the crispy crust:

  • 1 egg
  • 90 g sugar
  • 50 g butter
  • Some almond flakes

Recipe

Peel the apples and cut them into thin strips (sprinkle the lemon juice so they do not brownish). Place the apples in the bottom of a large silicone mold or a buttered and floured mold (24 cm).
Preheat the oven to 180 °C (350 F).

Dough preparation | In a bowl, beat the eggs, sugar and vanilla until a foamy mixture is obtained. Stir in the oil and milk. Add the flour and salt in another bowl. Gradually add to the previous mixture while whisking until you get a smooth texture. Pour the dough over the apples and bake for 25 minutes.

Crispy crust preparation | Beat the egg, add melted butter and sugar in a bowl and pour over the cake evenly. Sprinkle the surface with flaked almonds. Bake for 15 additional minutes or until the surface is golden brown and an inserted knife comes out dry.

Let cool before unmolding. Sprinkle with icing sugar if desired.
